On the 17th of December I celebrated friendmas. (Friendmas is Christmas but with your friends)For this occasion I wanted to do some baking and make some special treats. I made Gingerbread Cheesecake Truffles. I used the recipe from a well-know youtuber Zoella. Zoella made hers more like cake pops on a stick but I wanted to put mine in little homemade cupcake cases because I thought it would look cute (but you can do either: I will link the video at the bottom)
This is what mine look like:- a mixing bowl
- a table spoon
- ginger biscuits
- white chocolate
- small sauce pan
- a small bowl you can heat
- Crush your ginger biscuits. I put mine in a plastic bag and bashed them with a rolling pin but if you have something like a nutribullet you can just put them into that. (in the picture is only half the amount of gingerbread I used in the bag because I did too lots of whacking)
2. Once crushed into small crumbs pour out into a mixing bowl. In this bit you are going to get your hands sticky. Place a big tablespoon dollop of cream cheese and using your hands mix it in. It should only just form a ball.
3. I used an ice cream scoop to form the balls which I put into a tiny muffin tin with squares of baking paper making little muffin cases.
4. Then place them in the freezer for 30 minutes. I was having dinner whilst they were in the freezer so I think it was over 30 minutes but they still kept there shape. Once 30 minutes is up, get them and out and break some chocolate it a heatproof dish and start to melt it. You want to melt it so that it is completely melted but be careful not to heat it too much. (I found that three bars wasn't quite enough)
5. Once the chocolate is melted. I used a spoon to drizzle my chocolate on but if you wanted you could take them out of the cases using a cocktail stick and dip them in and then place them back in the case which is a good idea but I wouldn't be able to tell you is that would work or not because I drizzled it on.
6. Once all cheesecakes are covered place them in the fridge until you want to eat them!!!!! (I would suggest leaving in the fridge for a least 2 hours!!
